Tasty in twelve! Preheat oven to 400. Line 8 mini muffin cups. Mix in a bowl: 1 egg, 3 Tbsp water, 3 Tbsp coconut oil, 3 Tbsp almond flour, 2 Tbsp cocoa powder, 1/4 c date sugar, 3 Tbsp chocolate chips, pinch salt, few drops vanilla. Scoop into liners. Bake 12 minutes. Chocolate cake on the fly. Inspired by Lucky Peach 2 minute mug cake.
CORRECTION: Lucky Peach apologizes for the erroneous entry that editor Peter Meehan penned in the Street Food issue about New York hot dogs, in which he may or may not have called them “gross.” Reader Rehaan Anjaria’s letter points out his mistakes and notes, correctly, “Hot dogs are always good. Everywhere!”
I was really hungry and these Asian meatballs w sesame lime dipping sauce took care of that! Recipe from Skinnytaste, only I used beef instead of turkey, almond flour for panko, and gf soy sauce (tamari). All the better for it I say! So lucky to have found this little (recipe) treasure 😃
Once upon a time (issue 3, spring 2012) we printed a recipe for a “2-minute chocolate mug cake,” aka “the most dangerous cake in the world.” It’s a cake you mix in a mug and “bake” in the microwave; it’s ready in mere minutes. This was part of an investigation into the history of molten/lava cakes: those ubiquitous, single-serving chocolate cakes with runny centers found on Chili’s menus and in Wal-Mart freezer aisles (and of which Michel Bras’s “chocolate coulant” and Jean-Georges Vongerichten’s “chocolate Valhrona” were forefathers).
